Peanut Butter & Cookie Dough – A Whole New Level

Waaaaaaa my wisdom teeth are coming through and they hurt like hell. When I was little I remember my parents would give me a little cloth daubed in brandy to stick on any teeth coming through to numb the pain. Now, sadly, I don’t have that, just some foul tasting, super strong mouthwash to do the same job. And in times of need such as this, or rather, when ever I feel like it, peanut butter works equally well.

All done!

This slightly fancy pants dessert was also inspired by a great catch-up, where a mild September afternoon was spent lazing about in a park, enjoying each other’s company and some awesome peanut butter and cookie dough cupcakes.

I’d love to put up a recipe, but I really don’t know what I did. These days I do lots of things by eye, taste and feel. But here’s an outline of all the different components in this dessert:

Peanut butter mousse

Salted peanut praline

Salted peanut butter caramel (!!!!)

Eggless choc chip cookie dough – I found the most amazing recipe here at Willow Bird Bakes, I’ll also be accepting her croissant challenge in the very near future.

Vanilla sponge

Plating Up – Stage 1

Each of these components is actually really simple to make, it just took a little while to get everything done and assembled, ready to be plated up.

Prep Bits and Pieces – Peanut Praline & Vanilla Sponge

I know it all sounds very salty and peanutty and probably a bit gross, but it actually turned out to be the opposite, a little too sweet. Next time I’ll cut down on the amount of sugar in the mousse, and definitely change the peanut butter. Unfortunately the only pb I had at work was not of the best quality, so it didn’t really shine through in the dessert. I’d also skip the vanilla sponge – it turned out to be one too many elements on the plate and didn’t really add anything to the dish. On the whole though, I’m very pleased with how it looked, and I loved the peanut praline, and the eggless cookie dough.


It was a fun day of experimentation and I’m certainly going to be working on this loads until I get it perfect!
